Stem Shapes

The shape of a mushroom's stem can hide surprises. If you  cut open the stem of many of the mushrooms with pores rather than gills, they will turn blue or a greenish blue.   Indeed, this is a sure sign that your specimen is not the prized  Porcini Mushroom.   Other inflated or bulbous stems  may be hollow inside. The stem of many Russulas have a brittle rind stuffed  with flesh that ranges from fluffy to solid.   There can also be chambers inside the stem.
